I once interviewed the chef/owner of one of Queensland’s busiest and most successful Italian restaurants. He had just won a national competition for making the best pizzas in Australia. In the competition, he had to make four pizzas—a meat, a seafood, a vegetarian and a specialty version—in front of discerning judges and a crowd of people at a cook-off in Melbourne.

This man had gone to breathtaking gustatory lengths with his toppings. His meat pizza was layered with cranberry sauce and topped with turkey, walnuts, asparagus, fetta and so many other ingredients I’ve forgotten them now. His seafood pizza was piled with prawns, scallops, red pepper and caramelised onions. The vegetarian version was awash with chargrilled sweet potato, pumpkin, broccoli and mushrooms on a sweet potato purée. His specialty—a colourful concoction with brown sugar and cinnamon folded through the base—was patterned prettily with caramelised bananas, macadamia nuts, berry coulis-stuffed profiteroles topped with rich dark-chocolate sauce, and finished off with cream and ice-cream in the middle.

‘What do you think Italians would think of all this stuff on top of a pizza?’ I asked the chef.

‘Don’t know’, he replied.

‘Do you think we have taken the pizza too far, done too much with it?’ I asked.

‘No, not at all.’

‘But a pizza is meant to be tomato, mozzarella, maybe anchovies. What do you think about Australian chefs putting a Thai chicken curry on top of a pizza?’ I continued.

‘It’s our most popular one’, he said.
